Products in Oil
History
Men have always had the need to have food supplies and therefore, sometimes also by chance, they have found ideal solutions to preserve them. Many specialties we can still taste and appreciate were born in this way: among them, cheese, wine, and cold cuts. The food preservation practice based not only on salt - which played in the past an essential role in the economy of large areas - but also on animal and vegetable fats has very ancient origins. In the current area of the National Park, recipes based on lard or oil have developed over the years according to the agricultural or sheep breeding vocation of the area of origin.
Current Production Area in the Park: They are produced in the whole Park area.
Description
Unlike the industrial production based on the more common and cheaper seed oil, the local producers use the local extra-virgin olive oil combining it with the fruits of their horticultural or spontaneous products. This is also reflected in the final quality of the product, and gives the opportunity to taste it also beyond the harvesting season.
