Fresh Herbs
History
Fresh herbs are native of the Italian Mediterranean area; in the past, common salt was a precious good, and fresh herbs adequately replaced it in gastronomy to flavor dishes. Today, in cuisine, fresh herbs still play an essential role in many successful dishes. Moreover, in diets poor in sodium, they replace common salt giving at the same time taste to the dishes.
Current Production Area in the Park: They are cultivated or spontaneously grow in the whole Park area.
Description
The most exploited fresh herbs are shrubby plants or, more frequently, annual or perennial herbaceous plants. Aromatic substances are produced by both picking up spontaneous species and cultivating them as horticultural species.
The main cultivated or spontaneous species are:
- Laurel
- Oregano
- Rosemary
- Sage
- Thyme
